Happy Monday, Thieves! We’re talking to Ryan Gillette of NYC’s newest brewery, Belse NYC. Belse is a vegan restaurant that occupies the former Paulaner space on the Bowery. Ryan talks to us about his journey to Belse, includes stints at Keegan Ales, New Belgium, Trillium, and a few other places, and about what it’s like brewing for a vegan-focused restaurant group.
