Happy Monday, Thieves! Welcome to another raucous episode, recorded from our various bunkers, complete with heavy sighs, Vasse musings, hot takes from the black glass, and minutes long questions from the Orange clad one.

We are minus Kennedy on this episode as he was off taking in some hikes in the Hudson Valley, but joining us is Zach Nichols, the founder, owner, and brewer at Cellar West Artisan Ales.

Zach began his journey in beer in 2009 while working at a small bottle shop in his native Madison, Wisconsin. Shortly thereafter he spent time as an assistant, and later lead brewer, at a small brewpub in the midwest countryside, crafting traditional lager and occasionally experimenting with eccentric Belgian farmhouse ales.

In 2012 his now wife, Rachael, lead Zach to the Front Range where he spent several years working in the Colorado brewing industry, including a stint in the world of mead-making.

In January 2017, after years of brewing observation and application, Zach's longstanding dream of a small, artisanal beer company was brought to life in a little garage space in North Boulder. There, nestled at the base of the foothills beside autobody shops, a homeless shelter, and strip club, Rachael and Zach founded Cellar West Artisan Ales.

We should note that we recorded this episode a few weeks before the tragic mass shooting occurred in Boulder, Colorado.

As a huge snow storm was getting ready to roll in, Zach tucked in to tell us about his brewing career, his fascination with mixed fermentation and love for lagers. Tune in and let us know what you think!

Happy Monday, Thieves! It's been a while since we last caught up with Todd Boera, the co-founder of Fonta Flora Brewery in North Carolina, so we invited him into our COVID-19 free telephone studios for an update. He was kind enough to bring Jeremy Inzer, the head brewer along with him.

Inzer was was a brewer at Live Oak in Austin, TX but is now having fun on the farm, experimenting with different fruits and herbs, and working hard to keep the native yeasts happy.

They joined us for the black glasses and if you're looking for a fun game to play at home, take a drink everytime someone says "paw paw". Tune in and let us know what you think!

He’s written thousands of articles about beer, is the author of many books including For the Love of Hops and Brew Like a Monk and sends out a monthly newsletter called Hop Queries.

Not only does he join us for the black glass tastings, but he goes deep into the history of several varieties of hops and even shares some knowledge on what the future will bring to our IPAs and lagers.

We're hard pressed to find another brewer that has also won an Emmy award, so it's a real treat to welcome Brandon Jones onto the show this week. He's the brains and brawn behind Embrace the Funk, the wild program out of Yazoo Brewing in Nashville, Tennessee.

From talking hops and fermentation to his various pet peeves, Jones is one of the more thoughtful brewers in America today. He shares his expertise and passion in a way that is infectious.

And while it might not be an EGOT, he's now the first person to have appeared on all of Holl's various interview podcasts. He was obviously saving Steal This Beer for last, since Augie says it's the best.

Speaking of Augie, this episode gives birth to yet another collaboration beer, this time with Jones and Even Watson. We'll keep you posted.

When we started this recording it seemed like the postal service was going to let us down with Jones' delivery, but just as glass one was being discussed, the beers arrived, properly chilled (thanks to some frigid middle Tennessee weather) and we had a full complement of palates.

This week we're welcoming in Hagen Dost & Bill Wesselink of Dovetail Brewery in Chicago to talk about their love of rauchbiers and their very awesome coolship, which they use for all of their beers. The duo met in brewing school and for the last several years have turned Dovetail into a destination for beer fans far and wide. They specialize in lagers, and have begun sending their beer out of state to thirsty patrons. From talking about how the pandemic has affected their business, to the unique flavors that arrive in their beers via the CTA's Brown Line, these two brewers have a healthy respect for tradition but are also bringing good humor to the beer scene.

We made it, Thieves! This week marks a milestone on the show. We've achieved the 300 episode mark. For the last 100x3 weeks we've come to you Monday at 5pm. Some shows have been better than others, many were at Barcade Jersey City or Treadwell Park in Manhattan. Sometimes we took it on the road to Boston, or Philly, or Atlantic Highlands, NJ. More than once we had Chief, Evan Watson, and our friends stop by to pour beer into the black glass. It got nutty sometimes. 

To mark this significant number of shows we called out to California and asked Vinnie Cilurzo of Russian River to finally give us the recipe for Pliny the Elder. He did not disappoint. Over the course of this very very very long episode he tastes along with us (Casse was in charge of both beer selection and FedEx. Well done, young man) in the black glasses and shares stories about his first ever canned beer, his relationship with Sierra Nevada and what Younger Day will look like for 2021. 

We've made it this far because of you, so thanks for all the support and conversation. Looking forward to 300 more.

Happy Almost 2021, Thieves! It's a holiday tradition around these parts to close out a calendar year with a visit by Joel Shelton. We weren't going to let a pandemic or the recent closure of his brother's beer import business get in the way. We dialed up Joel to talk about the shit show of the year that was. He has some stories. Since the postal service stranded Justin's Bodega beers (Hey, we have tote bags available) at some sorting facility near the Gowanus Canal for weeks, we had to dip into our cellars to open something special. 

From talking about reconnecting with his music career, to holiday traditions, and what the future might hold for travel, beers coming to our shores, and more Joel was a real delight to connect with as usual.

We miss it even more after our recent conversation with Mike Messenie of Dutchess Ales, a small brewery from Wassaic, NY that crafts some of the most subtle and delightful cask ales we've had in years. Though Dutchess has recently shifted to contract brewing a variety of different styles at locations in Brooklyn and on Long Island, we discuss our mutual love for traditional real ale and talk about what drives Mike to make beers that are considered by many to be unfashionable. If you tuned into our show with Ryan Scott of Odd 13 last week, you'll recall Justin played a rather mean trick on Augie, John, and Ryan by putting a "Christmas IPA" from ABI/Goose Island in the second black glass. That beer's barely-drinkable nature prompted us to wonder aloud whether we should get Josh Noel on the show. Josh literally wrote the book on Goose Island—BARREL-AGED STOUT AND SELLING OUT: GOOSE ISLAND, ANHEUSER-BUSCH AND HOW CRAFT BEER BECAME BIG BUSINESS—focusing on the eventual AB acquisition of that company, so we wanted to talk to him about what the hell we just tasted. Happy Monday, Thieves! We've tried twice to record a normal episode with Ryan Scott of Colorado's Odd 13 Brewing. The first was at a festival in Breckenridge a few years back. Justin hired a local recording engineer to record episodes in Holl's hotel room and, for one reason or another, the files were corrupted and we were never able to retrieve the audio. The second time was back out in Denver at Bierstadt Lagerhaus. Augie and John spent the morning sampling and pulling nails with Ryan at his brewery before we re-attempted a recording. That one panned out, but we were all in such bad shape we ended up posting it as a Patreon-only episode--a behind-the-scenes "treat" for our most ardent supporters.

Third time's a charm, or so they said, so we decided to give it one last shot and we think it turned out pretty well! Tune in here and let us know what you think!

Happy Monday, Thieves! Who doesn't love Fat Thor? This week we're glad to welcome Chris Herron and Adam Beauchamp of Creature Comforts Brewing in  Athens, GA (and coming soon to Los Angeles, CA). Chris is the CEO and Adam is the brewmaster of the rapidly growing brewery that has a lot of deep thoughts on the world of craft. Specifically you might remember an article that Chris wrote a few years back. It stuck in Augie's mind and so we spend a good amount of time talking about how craft has evolved, how the larger breweries are confusing the market and customers, and how the little guy can fight back.  Then we get to talk about the brewery's cameo in Avengers: Endgame and how that eventually led to them announcing a soon-to-open brewery in Los Angeles. It's cool to geek out when they mention the Russo Brothers. We sure did.  Justin hit us with some fun in the black glass, but USPS dropped the ball and the fellas of Creature Comforts weren't able to play along.
